Here at Aqua at Lakeshore East, we feel so lucky to live in one of the best cities. Not only is Chicago known around the world as the Windy City, but it is also known for its incredible St. Patrick’s Day events.
Since 1962, the city of Chicago has been dying its iconic river the perfect shade of shamrock green to celebrate the arrival of March 17th. People gather in the streets and along the RiverWalk to watch this spectacle take place each year, and cheer loudly as they sip on beer dyed green, Irish coffee, and whatever green cocktail they cooked up that day.
If you are looking for new ways to spice up your St. Patrick’s Day drinks this year, check out these three St. Patrick's Day cocktail recipes for drinks you can easily make at home to wow all your green friends!
Bailey’s Irish Cream S’mores Float
Serves: 4
What you’ll need:

8 large marshmallows
-
¼ cup of melted chocolate
-
½ cup crushed graham cracker (plus more for garnish)
-
1 pint of vanilla ice cream
-
4 cups of chocolate milk
-
½ cup Bailey’s Irish Cream
-
Chocolate Syrup for drizzling
How to make it:
-
Preheat the broiler on high. Place marshmallows on a small baking sheet and broil until golden on top, about 4 minutes.

Pour melted chocolate on a small plate and crushed graham crackers on another. Dip the rim of the serving glasses into chocolate sauce, then dip in crushed graham crackers.

Dish 1 ½ to 2 scoops of ice cream into each glass, pour 1 cup of chocolate milk on top and add a splash of Baileys Irish Cream.

Top each float with two marshmallows, drizzle with chocolate syrup, and sprinkle with additional crushed graham crackers for garnish.

Serve with spoons immediately and enjoy!
Lucky Charms Shots
Serves: 8
What you’ll need:

1 cup cold whole milk
-
1 cup Lucky Charms cereal, divided
-
1 cup Bailey’s Irish Cream, chilled
-
1 tbsp. rainbow sprinkles
-
¼ cup vanilla frosting
How to make it:
-
Pour 1/2 cup Lucky Charms into milk and let sit in the fridge for 10 minutes. Allow the milk to infuse with the cereal’s sugary flavor.

Strain out cereal, pouring milk into a pitcher. Add Bailey’s Irish Cream to the cereal milk, stirring to combine.
-
Remove 8 marshmallows from the remaining dry Lucky Charms Cereal. Set aside. Take the rest of the cereal and crush finely, pouring it out onto a plate and mixing with rainbow sprinkles.

Dip shot glasses into the vanilla frosting, then roll in crushed cereal.
-
Fill each drink with Bailey's-infused milk and serve.
Jameson Jello Shots
What you’ll need:

½ cup fresh mint leaves, packed + more for garnish
-
½ cup + 1 tsp. Sugar
-
1 ½ cup water
-
½ cup fresh lime juice
-
3 drops green food coloring
-
2 packages of unflavored gelatin
-
1 cup Jameson Irish Whiskey
How to make it:
-
Muddle together mint leaves and 1 teaspoon of sugar until leaves release oil and smell minty. Set aside.

Pour water and lime juice into a medium saucepan. Sprinkle gelatin powder over the water; whisk to combine and let stand 5 minutes.
-
Add the rest of the sugar and the muddled mint leaves to the pan. Whisk to combine. Cook on medium-high heat for 5 minutes, whisking gently until mixture is hot and the sugar and gelatin are dissolved. Remove from heat and allow to cool for 15 minutes.

Strain the liquid to remove the mint leaves. Return liquid to the pan and add whiskey and green dye.

Spray silicone molds with cooking spray to allow easy release after gelatin is set. Carefully pour the liquid into the molds.

Refrigerate for at least 3 hours, until fully set.

Remove from molds, garnish with mint leaves or gold sprinkles, and enjoy!
