Easy Summer Cocktails to Make at Home

As we move closer and closer into the summer months, we need to find new ways to stay cool and refreshed here in the Windy City! Gathering with friends and concocting up a new and fresh recipe ideas should be a part of everyone’s summer vacation. Quench your thirst through the warmer months of summertime by grabbing a summer drink and get ready to amaze your friends with these new dazzling cocktails recipes! 

The Cape Codder

For this east coast inspired cocktail, you’ll need just five simple ingredients that you may already have stocked up in your kitchen. Picture yourself coasting down the east coast shoreline in a yacht as you sip on the Cape Codder. *This recipe is for a single serving*

Ingredients: 

  • 2 oz. Vodka
  • 2-3 oz. Cranberry Juice Cocktail
  • ½ oz. Lime Juice
  • Club Soda

Directions:

  • Pour vodka, cranberry juice cocktail, and lime juice into a glass over ice. 
  • Stir and top with club soda. 
  • Garnish with a lime wedge and enjoy!

 

Watermelon Tequila Cocktail

This next drink requires a little more effort on your part as the bartender, because you will be cooking up your own sugar syrup. This simple syrup will not only enhance the taste of the drink but will help you show off your skills behind the bar! *This recipe makes 8 servings*

Ingredients:

  • ¼ cup of water
  • ¼ cup of granulated sugar
  • 8 cups of diced seedless watermelon (about 1 pound)
  • ¼ cup fresh lime juice
  • 1 ¾ cups blueberries
  • ¾ cup lightly packed fresh mint leaves (plus more for garnish)
  • 1 ¼ cups silver tequila
  • ice

Directions:

  • Combine water and sugar in a small saucepan and bring to a simmer. Continue to stir over moderate heat until sugar is dissolved, about 1 minute. Let cool.
  • In a blender, pulse watermelon until smooth. Strain watermelon juice over a bowl using a fine-mesh strainer. Press gently on solid pieces to extract as much juice as possible. Discard excess pulp. 
  • Combine sugar syrup, lime juice, blueberries, and mint in a large pitcher. Use a wooden spoon to lightly muddle the blueberries and mint. Top off with watermelon juice and tequila, then refrigerate about 2 hours or until chilled. 
  • Pour cocktail over ice in a tall glass, garnish with fresh mint and enjoy!

 

Strawberry Lemon-Mojito

This refreshing treat combines everyone’s childhood favorites, lemon and strawberry into an adult styled drink. Perfectly made for enjoying a Chicago sunset on your balcony at Aqua at Lakeshore East, cheers to summertime! *This recipe makes 4 servings*

Ingredients:

  • 8 lemon wedges
  • 24 fresh mint leaves, plus more for garnish
  • 4 strawberries, plus more for garnish
  • Ice cubes
  • 8 oz. gold or aged rum
  • 3 oz. fresh lemon juice
  • 2 oz. sugarcane syrup or agave nectar

Directions:

  • In a cocktail shaker, muddle lemon wedges, strawberries, and mint. Add ice, rum, lemon juice and sugarcane syrup. Shake well.
  • Strain into a tall glass filled with crushed ice. 
  • Garnish with halved strawberries and mint. Enjoy!
